The left radical is 'wine jar/alcohol' (酒), here meaning 'alcohol-like liquid'. The right radical is a character found only in Chinese meaning 'linger/dawdle', which acts phonetically to express 'sharp'. Thus, 'sharp (tasting) liquid', or 'bitter', and later, 'acid'. Henshall suggests as a mnemonic: 'Alcohol has lingering bitter acid taste.'
